Pickled Red Onions

Method
- Combine
apple cider vinegar
,sugar
, andsalt
in saucepan. - Cover and bring to a simmer.
- Remove from heat and pour into heat proof bowl along with
red onions
. - Stir and let sit at least
60 mins
. Then drain.

- Top tacos with this to add a sweet and spicy bite.
