Lemon Loaf

Method
- Preheat oven to
350F

a 9x13 inch loaf pan. - Beat
eggs

. - Whisk in
lemon juice

. - Separately, combine

. - Add

ingredients, barely combining. - Pour batter into loaf pan, smooth, and bake

or until fully cooked. - Cover loaf with foil during final
10 mins
. - Let cool
1 hour
in pan, then remove.

- Pairs well with a lemon icing.
- Whisk together 2 cups
powdered sugar
and 4 tbsplemon juice
