Yield: 6 muffins
Method
- Preheat oven to 350F.
- Brown
sausagein pan, then remove and cut into 0.5 inch chunks. - Separately, whisk together
eggs,milk,salt,pepper, andspinach. - Grease 6 muffin tins and distribute
egg mixtureevenly. - Distribute
sausageandcheeseon top. - Bake 20 mins or until firm.

- Keeps for 4 days, refrigerated.
