Sausage, Spinach, Cheese, & Egg Muffins

Yield: 6 muffins

Method

  1. Preheat oven to 350F.
  2. Brown sausage in pan, then remove and cut into 0.5 inch chunks.
  3. Separately, whisk together eggs, milk, salt, pepper, and spinach.
  4. Grease 6 muffin tins and distribute egg mixture evenly.
  5. Distribute sausage and cheese on top.
  6. Bake 20 mins or until firm.

Notes

  • Keeps for 4 days, refrigerated.
